Bodegas Hidalgo la Gitana was founded in 1792 and since then the company has passed from father to son, Today is one of the few wines companies owned and controlled by the family and run by the eight generation in the direct line of the founder. Triana is made from Pedro Ximenez grapes which are left in the sun to become raisins before pressing. The fermentation is interrupted by the addition of alcohol to 15% leaving a high residual sugar content. The wine is then aged in oak for an average of 6 years in American butts in the traditional Solera System.
