For Mathilde Poire, we have selected the Poire Bon-Chrétien Williams, also called Bartlett: when it reaches maturity, its skin turns golden yellow. Its non-grainy white flesh is very aromatic and juicy.
In order to be able to extract as much aroma as possible, we press the fruit into a juice which is fermented before the final distillation. The pear distillate is then enhanced with a hint of quince, a fruit with an intense aroma. This particular step intensifies the flavor of the pear. A week-long maceration process follows which, in turn, produces a fresh and luscious pear liqueur.
