The Vine Peaches used for Mathilde Pêche are small, with a hard skin and a particularly rich white flesh. Incredibly juicy, despite their small size, with an intense and seductive taste, they are considered the tastiest variety of peach. We only use Vine Peaches grown in France, selected by hand to ensure their freshness.
The peaches – skin, flesh and core – are macerated in alcohol. The whole peach is used to extract as much of its taste and aroma as possible. A small amount of sugar is incorporated and water is added to work on the texture of the liqueur, for a rounded palate.
