Flavor Over Profit
In 1962, distillers were permitted to raise barrel entry proofs to 125, which may have produced more bourbon, but Maker's® intentionally kept their BEP at 110, making them the only major distillery at the time to do so. The belief was that a lower BEP delivers more flavor, smoothness, and even color. Extra water helps improve the congener concentration, which imparts flavors of caramel, vanilla, and baking spice. These decrease as BEPs increase.
