Dingle Gin is the result of a significant amount of research and experimentation, resulting in a one-of-a-kind gin that is both traditional and innovative. The botanicals in gin are macerated for 24 hours in spirit. After that, the alcohol is distilled and passed through a flavor basket in the still's neck. For a flavor of the Kerry countryside, Dingle employs rowan berry from mountain ash trees, fuchsia, bog myrtle, hawthorn, and heather, among other botanicals, to create a true feeling of place and provenance. The liquor is collected and then reduced to 42.5 percent abv with the finest water available, pulled from their own well 240 feet beneath the distillery.
