Derrumbes Guerrero is meticulously crafted by the esteemed maestro vinatero Israel Ríos Bucio, located in Coyuca de Catalán, Guerrero. This premium spirit is derived from the wild maguey Penca Ancha (Agave cupreata). The production process involves cooking the agaves in a subterranean oven, followed by milling with a mechanical shredder. Fermentation occurs in open-air plastic barrels, and the mezcal undergoes a double distillation in a unique still. This still comprises a hollowed higuera blanca tree trunk positioned over a copper pot, an innovative approach to distillation.
