Copal White Rum is the flagship rum of the Copal Tree Distillery in Southern Belize and brainchild of co-founders Anya Fernald of Belcampo Inc. and Todd Robinson, a conservationist and champion of Belize's pristine environment and local communities. A farm-to-bottle operation, Copal Tree Farms is the first certified organic farm in Belize.
The farmland surrounding the distillery produces all of the heirloom variety sugarcane used to make the rums and is nestled within 22,000 acres of protected rainforest. The organic, single estate rum is made from just three ingredients: sugar cane, canopy rainwater, and yeast. Nothing else is added ever.
Made from fresh-pressed cane juice, the white rum is a blend of double distilled pot and column still rum and rested in stainless steel for an exceptionally smooth white rum.
