Casa Azul Organic by Eiza González Reposado Tequila is crafted using traditional techniques and the highest quality organic agave. It is aged for 2-3 months in American oak bourbon casks, resulting in a tequila with rich baked agave and candied yams, hints of toffee and caramel, and a long, exceptionally smooth finish.
Casa Azul Tequila is produced at Tequila Las Americas, NOM 1480, by the Montes family. The agave plants are grown on a single estate near the distillery in the Lowlands, thriving on mineral-rich, dark volcanic soil. The entire process is done by hand without the use of pesticides or chemicals, resulting in an exceptional organic tequila.
The agave plants are tended by hand until fully mature, with no pesticides or chemicals used. Each plant is USDA certified organic, ensuring that only the highest quality agave is used to make Casa Azul Tequila.
Casa Azul Tequila's piñas are baked low and slow in a traditional stone oven, resulting in a tequila that is true to its flavor.
The tequila undergoes natural, open-top fermentation with wild yeasts, which enhances the natural aromas and creates a more full-bodied tequila.
After fermentation, the tequila is twice distilled in pot stills then rested for two months, allowing it to aerate naturally for a smoother, softer profile before aging.
