Rabarbaro is a small but noteworthy segment of the world of Italian bitters, distinguished by its extraordinary, peculiar basis of Chinese rhubarb. In every sip, the rhubarb takes center stage, with true fruit upfront that sweetly and effortlessly fades into a strong, earthy smokiness. Aromas of alpine herbs, celery root, preserved mountain berries, and moist soil dance around the core of woodsmoke and spice.
Tasting Notes
As the name suggests, this unique rhubarb-based bitter amaro from the Cappelletti family demonstrates a fine balance of crisp and earthy, smokey notes. For nearly a century, the Cappelletti's have been making Sfumato with Trentino's unique Chinese rhubarb as a base for flavors like candied orange peels, celery salt, flint, pickled herbs, green strawberries, and raspberry preserves.
The beginning is luscious and delicious. On the way to a dry, bitter, lengthy finish, it cleans up well on the mid-palate.
