Camazotz is a hand-made, raw sugar cane rum produced in the eastern highlands of Oaxaca, Mexico. Made by 2nd generation producer Maestro Leoncio Gaspar in the eastern highlands of Oaxaca, the juice of the sugarcane, grown in the surrounding hills, without pesticides, is pressed by hand using a mule-drawn press, then open-fermented with the spent cane (to help start the fermenting process) and water, using only wild airborne yeasts.
The fermented juice is distilled in a 300 ltr copper alembic still. After the distilled liquid is carried manually up the mountain to the village we collect it and bring it to Oaxaca for bottling. It is bottled un-aged with no additional ingredients. The resulting rum is expressive from the first sip and makes for a highly unique and delicious daiquiri. Tasting Notes - The liquid is clear in the glass with a beautifully expressive aroma, driven by its terroir.
Palate - Mildly sweet and full of fresh sugar cane, vegetal grassy notes, and woody tones. Long saline finish. Camazotz shares a similar heritage to Agricole and Cachaca-style rums, being very expressive of its raw ingredient - sugar cane. With nothing added or taken away, it’s true to its Oaxacan aguardiente heritage.
